I have quite a bit of 270 brass, but very little of the 25-06 variety.

Given the similarities, are there any inherent difficulties in running the .270 brass through the 25-06 die and trimming to size?

Although I have not done this personally, I would think not. I have read several opinions where the poster said that using .270 brass to form 25-'06 was preferable to using 30-'06 because the neck growth was less, and there was less chance of a thick neck because the sizing down was significantly less.
