I have found A very Accurate Load my 708-MM with a 130 grain sierra pro-hunter spitzer pistol bullets. How will that bullet preform on a average of 100 to 160 pound White Tail?

You can get pistol bullets in 7mm? Why? Never heard of that. If they really are designed for handgun velocities, I sure wouldn't be using them for deer out of a 7/08. Besides, 130 is too light for that caliber. I think in that cartridge a 150 grain bullet would be ideal for deer.

Yup, Sierra does list a 7mm 130 gr prohunter for single shot pistols. Since it is a prohunter I would expect they will perform nicely on deer.

I would think they will behave much like a 140gr Nosler Ballistic Tip. Very frangible, especially at close range; <100 yards with velocity over 2600fps.
Have you tried or concidered Rem's 140gr Core Lokt, Sierra 140gr P-H or Speer 130 or 145 SP Hot Core's? Those are my recommendations. Hornady 139gr SP's are good to although, I couldn't find a recipie that my rifle liked them with.
My Browning Micro Medallion likes the Rem 140's with 47.7gr of W760 ignited with a WLR primer and seated for .02" free-bore. I clock them at about 2750fps at 5 yards from the 20" barrel muzzle. At that velocity their good for a 6" (+/- 3") point blank aim range of ~260 yards. I'm sighted at 2.7" at 100 yards. On good day's I get groups less than .5" at 100 yards and average less than 1" at 100 yards. Good enough for minute of deer.
