Karl, I've carried the .375 H&H (for the most part) as a backup rifle while guiding for pigs for the last 8 years. Although it isn't needed, it's my favorite cartridge. I like full penetration (two blood trails if needed ) and most of my shots are at the south end of a north bound (wounded) pig. So great penetration is what I'm looking for. But to answer your question for the heavier bullets (I really haven't seriously used any lead core bullets under 270gr.) I've seen the LEAST penetration with the 300gr. Sierras. I'm playing with the 300gr. Hornadys now because the .375 I'm carrying likes them so much. I've carried the 235gr. X a lot and very easily could have finished off several hundred pigs with that bullet. I can only remember recovering 2 of them but they kill very well and leave a good wound channel without destroying as much meat as smaller guns going faster. That's what I'm looking for.
