well, I fried up the first sausage from my Boar this morning, and boy was it ever goooooood.

These things aren't gamey at all. I think I'm gonna be huntin them more often dancing

sorry conifer, the farm we hunted did all the work. I do know they used a packaged seasoning mix.

If taken care of properly it shouldn't be gamey. You can use whatever recipe you use on domestic pig.
Mix it with venison ,that's nice. Mix with venison to make Bolognese sauce for pasta !!

get you a Penzeys spice catalog and order there breakfast sausage mix. my last order was 2.95 per 4oz package. you need 4ozs per 10lbs of ground meat. work with venison too! easy to make just spread the meat out sprinkle on the spices mix package or eat! clint

Old Plantation seasoning pack #25. does 25 lbs of pork and is the best breakfast/pan sausage I've ever had.if you mix 12 lbs venison and 13 lbs pork with it,makes great venison breakfast patties.

I pretty much use all the muscles,including Hams, to make sausage.I use the backstrap(loin) for Jaeger Schnitzel.
