jeffeosso"free-range pork medallions" its what's for dinner
took one loin out of a feral hog (~140#) .. butterflied but left attached to silver ..
mccormick's tenderizer
rudy's sissy sauce
black pepper
paprika
chili powder
garlic
and a bit of water
let sit at room temp for 2 hours then grilled
let's just say it was darn good and the family loved them.. along with a little cab.
