I had lunch Tuesday with one of the oldtimers here. I mentioned I tried Elephant kidney, and tenderloin, and even a bit of liver. His rather pithy comment was: "Rich, you might, but I don't eat FILTERS...". I thought that was hilarious, and decided to share it with you. Rich DRSS | |||

A shower to wash away the dust then Boervors and cold beer or any backstrap steak medium rare with a good pinotage. Followed by tall tales and a bourbon and water or two around the fire. Perhaps a good cigar, watching the puffs of smoke from your cheeks loft towards the southern cross, then off to bed to dream about what the next day will bring. Waking up to the sound of sticks cracking behind the tent from some unknown beast. Waking again in the pre dawn smiling like a little kid on Christmas morning in excitement for the new day. Thinking how great it is to be here now and wanting it to always be this way. | |||

Thanks for the good ideas for some fine dining, fellas... I'm especially partial to JudgeG's recipe: "Impala liver... immediatly cut into 1/2x1" tidbits, flash grilled in a cast iron skillet with real butter and then simmered a bit with a little water, some Tabasco and ground pepper, a bit of red wine and flour to make gravy... then mashed into a ball with white rice like sushi rolls with a steamed grape leaves wrapper that had a tiny tad of raw sugar rubbed on it, a bit of squeezed lime juice for a citrus tang.... All done in front of you on a tiny grill over mopane coals. Dang!" Dang +1 + YUM! Grafton: -a post meal cigar and waking to pre-dawn smiles of excitement sound pretty good, too. | |||

Eland or kudu filets with termite mound mushrooms in a cream sauce in Namibia. Elephant finger steaks at the nightly fire (from my ele), with gin and tonic sundowners. Any fritters or pastries made with pumpkin. Devil's food cake with warm vanilla pudding for desert. | |||

as a physician, i can tell you i would never eat liver or kidney as both organs are nothing but garbage filters designed to clean the blood of toxins and other junk. if i wanted something like that, i would clean out my garbage disposal for dinner. however, it is VERY hard to beat eland or gemsbok fillets. Ever pay attention to what parts of animals that predators eat first? ALWAYS the Liver. WHY? because it contains sugars, fat and all the essential minerals needed for survival. As a Doctor you aren't much of a nutritionist. Kidneys? No. smells too much like piss no matter how long it's boiled in changes of water... AD If I provoke you into thinking then I've done my good deed for the day! Yeah, most foreign hunters in Africa are eating for survival.....geesh In fact there is no reason for such people to eat these poison filters other than personal taste(s). I would further suggest that a predator's digestive system is more in tune with eating a variety of things that would kill the average person. | |||

odie, truth of the matter is we don't need meat of any kind. I eat meat because it is my preference and the same goes for offal. It is just fun to rag on people with delicate tastes. | |||

they eat the liver because they are always 1 meal away from starvation- i am not. if you eat a reasonably balanced diet( which certainly will be provided in camp) you won't need the nutrition either. the liver and kidneys are NOTHING BUT BLOOD PURIFIERS. think about what happens to the taste of anything contaminated with bile( the end product of liver function) or piss( end product of kidney function).
