Since I won't be in Africa the year , was thinking of making some meals at home, it's something... Made Bobotti - yum. Anyone have any others they could share? | ||

A good hunters stew cooked in a poikie pot. Get the pot hot - in goes some olive oil, fry up some blacl pepper and coriander seed, brown of some chunks of meat, some bits of bone - ie shin etc elapsed to really add flavour, the in goes some good garlic and onions, when nicely browned, some sugar or honey plus a good handful of herbs, Half a bottle of read wine, or couple of bottles of beer and a bit of water. On goes the lid, put it to the edge of fire to gently cook, two hours later, through in some potatoes, and when the spuds are cooked, start munching. | |||

In south Africa we call kebabs, sosaties. In the book african hunters cookbook there is recipes for sosaties. Here is one of them. SOSATIES IMPALA SOSATIES INGREDIENTS 2 fillets of impala Dried apricots 1 large green pepper 1 large red pepper (For colour use other colours) 1 medium onion Streaky bacon METHOD Cut the meat into chunks wrap each chunk in a layer of bacon. Quarter the onion and separate the layers. Cut the peppers into suitable chunks. Skewer these ingredients alternately. MARINADE: Can tomato paste ½ cup cooking oil ¾ cup dry white wine ½ cup medium dry sherry 6 Tbs honey 1 tsp Worcestershire sauce 2 tsp fresh chopped rosemary 2 tsp chopped fresh oregano 2 cloves garlic crushed 1 level tsp coriander 1 level tsp mustard powder 1 tsp salt and black pepper Marinade the kebabs for about 12 hours in a bag with all the air removed. Cook until rare | |||
