Very fatty. Rather coarse muscle fiber and not that tender. Flavor was stronger than beef, but different. It tastes like.... Hippo.


I have been told by my PH that a rather significant segment of the population is allergic to hippo, even if you have never had it before.

If I shoot one again, I will eat it, but its not as good as buffalo or eland, or for that matter duiker or bushbuck.
