Warthog Schnitzel - Not a Recipe, just an opinion

In Zimbabwe when I killed my buffalo we ate buffalo tenderloin the next two nights. It was better than the beef steaks I had previously in Vic Falls, and at camp, by a long way.

They seemed to think buffalo tongue on crackers was a real treat. They served it twice when we returned to camp and was relaxing before dinner. They said it was a treat, but I noticed I was the only one eating it. It was a 3 on a scale of 10.

Now the good part. After knocking down the warthog we ate warthog schnitzel for two days. That would rate 10 on a scale of 10. I was amazed.

What is your favorite African meat dish?

Brown sugar, a bit of mustard, soy sauce and sesame seeds mixed into a baste. Cut the loin into 1/4" medalions (thicker, if you wish to pound them) and grill over a very hot fire just enough to make the crust hard. Place over mashed potatoes cooked in the normal way (with skins included), with shaved onions, bacon bits, red and green peppers and sour cream blended in... then fry the potatoes like a pancake to put a crunch in them... candied carrots, fried squash and sauteed brussel sprouts on the side.

I had this in Zim once. I'd have killed three if I'd known what was coming.

I just love a Warthog. I make bacon of the backstraps, they also make a mean russian sausage. Absolutely gelicious.

My only regret/dissapointment from 2 trips to RSA is that they never cooked any warthog for us. I decided after the last trip I won't go back without insisting on it. Everything they served was great, but it doesn't seem right to travel that far to hunt and not sample everything you've shot.

Despite the rediculous trophy fee, I might have to shoot one in Tanz if they promise to cook it for me.

Canuck what is the trophey fee for warthog-I was hoping to shoot one as well as an impala if the opportunity presents.

It'll probably vary by outfitter, but I was shocked to see it was $495 in Tanz!!!!!

Impala wasn't a lot better...$385

I'd like to bag a zebra, but they are almost as expensive as the buffalo...$950

The trophy fees went up by 25% or so shortly after Don and I booked.

Me too. Only now it ain't just an African dish anymore. A South African lady that lives a few blocks down the street makes it for sale. I have it about once a week!! My GF loves it as much as I do.

Buff oysters and beer. They were julienned, breaded and deep fried. I was very hesitant as I'm not an organ meat fan. But they were absolutely delicious.

In RSA last year the owner of the ranch said that he never ate Warthog, scrub hare or doves. I said I'd cook dinner for him and his family if they could get me the bits I needed.

I made Hare Stifado, Warthog Kofte Kebabs and grrilled the Dove crowns with some balsamic and Garlic.....

He was so converted he told his wife to stop giving the warthogs away!! Luckily I shot 6 that week so he had some stock Wink

I think Impala Liver was my favourite although the Kudu steaks were pretty good.

Recipes do not substitute for culinary technique. Proper aging is one such necessity.
