Interesting method.
I have lately discovered that baking my bacon really turns out nice. I just layer it in a cake pan and bake it at about 450 until the bacon is cooked to the desired consistency. It gets nice and crisp and stays flat. I don't need to flip it. It does take a while, mayby 20 minutes or so, so keep an eye on it. It seems to have better flavor, but that might just be my imagination.

They say in the article that he was "born into a small community in Zavalla, Texas".

Back in the 70s people in West Texas used to joke about the families around Sonora and Ozona being inbred. Maybe the politically correct way of saying that now is "small community".

As to the bacon cooking method, I'll stay with the conventional version. His way seems a little expensive.

Here is a tip : once the heat is turned off, squeeze some fresh lemon juice over it before serving...! To die for!
