stuffed duck breast

stuffed duck breast
bone out both sides of the duck (2 pieces of breast)
pound each piece flat until its about 3/16-1/4 inch thick
spread on about a big teaspoon green chiles
cube up about 3/4 slice of swiss cheese and spread out on the breast
roll the breast into a tube and srap a piece of bacon around it, pinning it together w/toothpicks
put into a greased pan and into the over at 425 for about 15 minutes
at the end of the 15 minutes take out and pour about 1 1/2 oz of italian dressing over each breast
put back into over for 10 minutes (5 minutes if convection oven)

ha Butchloc sounds good ever though of swiss. wife is a swiss cheese nut, she calls it real cheese. i will try it this weakend. here is one for you, sub cream cheese for the swiss and mild pepper jelly for the salad dressing, BAM
