I was recently turned on to a cooking method called Sous Vide. (The internet is full of
information on this method, so I won't go into
that here).
All I can tell you is that I've been eating various game animals, deer, axis, various antelope, bison, etc. for 40+ years and this is by far the best way I've found to prepare lean meat.
This venison was cooked at 134F for 2 hours Sous Vide, then seared for 20 to 30 seconds on each side, salt and pepper and plate. The meat is medium rare from edge to edge, texture perfect, juicy, and flavor outstanding. You literally cannot screw up with this method. Impossible to overcook past target temperature.
Just wanted to pass this on to some other meat hunters and eaters. I had never even heard of
this until a few weeks ago.
(The last pic is the gadget I put together to cook Sous Vide. A hot plate, a 16 quart aluminum stock pot, and a PID temperature controller. Total cost $175. You also need a vacuum sealer to bag your meat)

GatogordoNever too late for an old dog to learn a new trick. I'd never heard of it until your post. Looked it up on net and it is very interesting. I see your set up but are you using your temp gauge to CONTROL temp or are you using it just for an indicator and controlling it by lowering or raising the dial on the hot plate?

It's a gadget that controls the temperature. It a
"smart" type device. It runs a test on your system and then develops an algorithm to turn your unit off and on to maintain the temperature within 1 degree Fahrenheit. You plug the hot plate into this and then the unit into the AC supply. There is a sensor that goes in the pot.

Zoboomafoo_dudeWow, that's a great diy setup. I've looked at sous vide machine and they're majorly expensive, even for the low end ones and they're totally out of my price range. This is something I could justify buying to experiment with.
