So I made this for tonight, cooking it on a grill would be so much better flavor wise but didn't have time. It fell over during cooking so had to improvise. Will be serving with homemade blue corn masa tortillas, thanks for the inspiration

We are having tacos tonight too.

Proper Mexican tacos with mince beef and all the trimmings.

A few friends enjoy our Mexican fajitas - some say it is the best they have ever had.

So today they coming for something else!
