anybody making pickles and sauerkraut?

NormanConquestI make my own sauerkraut from my Tante Rita's recipe. She was from Nuremberg but I like using white wine for fermentation ALA Bavarian style. Her key ingredient was finely grating a potato into the kraut while it was fermenting. Don't forget the juniper berries. Typically most don't add the potato + it makes a world of difference. Mines/ hers is better
