African Trackers Lunch
I always watch our trackers cook.

They use EXACTLY the same ingredients and method.

Their favorite is heart.

Preferably buffalo heart.

Failing this any heart will do.

Liver and kidneys are next.

And last is meat.

Any meat.

They wash the meat, heart, kidney etc.

Then they put it in a pot and on the fire.

No water.

It cooks in its out juice.

Once it nears getting ready, finely chopped ginger, garlic and onions are added.

They cook it some more.

Then they add a bit of oil.

Cook a bit more.

Add tomato paste.

Cook until they are satisfied everything is ready.

They add a bit of water, not much.

On another pot they cook mealie meal.

They put a bit of this in water and on the fire.

As it starts to boil they gradually add more mealie meal and mix.

Until they get the right consistency, like mashed potatoes.

saeed, I assume that as good as your cooks are already know this, but some folks might not. When removing the liver, find a little green corpuscle + cut it out. That is the gall. If you do not remove it, it will sour the meat. I assume everyone already knows this but passing it along just the same.

Like the little boy Hip. He pulled a worm out of it's hole. his grandpa told him he'd give him 5 bucks if he could get it back in there.
The boy ran in and got a can of hairspray. When the worm stiffened up, he put it back in the hole.
That evening, sitting on the porch, the boy said it was the easyest $10 he ever made. Grandpa said, I only gave you $5. The boy said, I told grandma what I did, she gave me $5 more.

Had friends in for dinner last night, and they all enjoyed this very much.

Might add potatoes next time.

The trackers always prefer the organ meat. I've been scolded, somewhat good-naturedly, for center-punching a liver on a quartering away shot. They thought I could have waited for a better shot angle. What they do with it is actually pretty good.

As to the mealie meal, or Ugali, has anyone tried to make it stateside? Would white cornmeal work or is it too coarse?

Well I plan to try it anyway. I'll report the results.

At least I know I can't find those little dried fishes here in the states. They are aweful, but you have to eat them when offered.

Some of the best meals I've had where cooked by the crew, Buffalo heart is fantastic with Mealie Meal. I'm don't care for the other vitals. Mealie is creamy grits basically, goes great with any meat.

Well that makes sense. Just overcook grits until they are "stiff".

Love grits, as a Southerner. But the absolute best way to cook them is to boil the grits and put them in a small, greased, loaf pan overnight in the refrigerator. Next day, dump out the loaf and cut into thin slices. Fry your bacon and then fry the slices in the bacon grease before you fry your eggs in it.
Enough to give my cardiologist a heart attack, but delicious.

I have always wanted to make the African Tracker's Lunch and did so tonight with some moose that our meat-hunter-par-excellence Mike Dettorre kindly gave me. Turned out excellent! The only thing I did different was add a little coriander and curry to the above recipe. And of course grits instead of proper ugali/posho/sadza. If I had the time I would have made homemade chipati - that would have been very good as well.

What I have learned on AR, since 2001:
1. The proper answer to: Where is the best place in town to get a steak dinner? is…You should go to Mel's Diner and get the fried chicken.
2. Big game animals can tell the difference between .015 of an inch in diameter, 15 grains of bullet weight, and 150 fps.
3. There is a difference in the performance of two identical projectiles launched at the same velocity if they came from different cartridges.
4. While a double rifle is the perfect DGR, every 375HH bolt gun needs to be modified to carry at least 5 down.
5. While a floor plate and detachable box magazine both use a mechanical latch, only the floor plate latch is reliable. Disregard the fact that every modern military rifle uses a detachable box magazine.
6. The Remington 700 is unreliable regardless of the fact it is the basis of the USMC M40 sniper rifle for 40+ years with no changes to the receiver or extractor and is the choice of more military and law enforcement sniper units than any other rifle.
7. PF actions are not suitable for a DGR and it is irrelevant that the M1, M14, M16, & AK47 which were designed for hunting men that can shoot back are all PF actions.
8. 95 deg F in Africa is different than 95 deg F in TX or CA and that is why you must worry about ammunition temperature in Africa (even though most safaris take place in winter) but not in TX or in CA.
9. The size of a ding in a gun's finish doesn't matter, what matters is whether it’s a safe ding or not.
10. 1 in a row is a trend, 2 in a row is statistically significant, and 3 in a row is an irrefutable fact.
11. Never buy a WSM or RCM cartridge for a safari rifle or your go to rifle in the USA because if they lose your ammo you can't find replacement ammo but don't worry 280 Rem, 338-06, 35 Whelen, and all Weatherby cartridges abound in Africa and back country stores.
12. A well hit animal can run 75 yds. in the open and suddenly drop with no initial blood trail, but the one I shot from 200 yds. away that ran 10 yds. and disappeared into a thicket and was not found was lost because the bullet penciled thru. I am 100% certain of this even though I have no physical evidence.
13. A 300 Win Mag is a 500 yard elk cartridge but a 308 Win is not a 300 yard elk cartridge even though the same bullet is travelling at the same velocity at those respective distances.
