Never have figured out a good name for this dish, but it a favorite for when we are camping.
in a roasting pan put in this order:
2 sticks of butter
4-5 large Yukon Gold potatoes sliced thin
1 large Vidalia onion sliced
1 each green, yellow, orange, and red peppers sliced thin
2 packages of sliced large Portabella mushrooms on top
Cover and cook in oven around 300* or over coals until potatoes are done.
Salt and pepper to taste.
Enjoy with grilled steak, pork chops or whatever, but save a bunch.
In the morning, reheat the leftovers.
Add a bunch of scrambled eggs and cut up smoked ring sausage to the mix.
It seems to get even better each time it is reheated.
