what i call cowboy chicken is cooked in either a slow cooker or a dutch oven.... either way, slow... 3-4 hrs in a cast iron dutch oven or 6-8 in a crockpot slow cooker.... either way, I cut up a couple of white sweet onion, in thick slices, and cover the bottom of the cooker... then I add chicken, either thighs that have been skinned, breasts, or a whole cut-up chicken, minus the back and wing tips... ( no small bones).. then add a can of green enchilada sauce, 12 ounce size, 2 12 oz cans of rotel, a can of water, about a teaspoon of salt, enough black pepper to make a good dust cover of the liquid, a couple dashes of tabasco sauce and cook on a medium heat until meat is done and tender,,, then long enough toi reduce liquid by half... onions on the bottom keep it from sticking...you can shred the chicken, serve on tortillas, or over rice.... your results may vary, but you get the idea...

Well, altered it just a bit, but can say it was damn good.

I used deboned thighs and legs.
finely chopped onion and garlic.
some Dijon mustard
some brown sugar
some tomato puree and some cut up tomatoes
for heat I used jalapeno peppers
and a good sized glass of white wine.
a but if salt and a bit of pepper.

cooked over the stove in a cast iron pot on a very low flame for about 3.5 hours. (probably could have made the flame higher and took less time to cook)

served over rice. Wide egg Noodles would be good too.

Damn good! Really tender meat.

I can see where those Rotel tomatoes would be just the ticket. You could put just about anything else you liked in this and it would be good.

I'm doing Jim's chicken today in the Crock Pot (gonna be 95 here, so I didn't want the Dutch oven on all day). Green enchilada sauce, two cans of RO*TEL, salt and pepper, 2 1/2 pounds of skinned breasts on a bed of Walla Walla sweet onions. Be making burritos tonight with rice and black beans.
