Arugula with Peppers and Tomatoes
Ingredients
2 T EVOO
1 red pepper, diced medium
1 green pepper, diced medium
1 onion, diced medium
1 bunch arugula, cut into strips
1 pint grape tomatoes
2 garlic cloves, thinly sliced (recommend elephant garlic)
½ t dried oregano
8 basil leaves, cut into chiffonade
1 t kosher salt
½ t black pepper
Pinch of red pepper flakes
1) Heat the oil in a large wok or skillet. Add the pepper and onion and sauté until crisp-tender.
2) Add the remainder of the ingredients. Cook for a few minutes or until the veggies start to give up their juice. Serve immediately.
* You may serve these veggies over pasta and top with Parmesan cheese for a light main dish.
