I tried making wine from paw paws last year and it is very good. I used Jack Keller's internet receipe with some additional sugar and allowed the paw paws to ripen fully so you squeeze them out rather than peel them.

Never have I had as hard a job cleaning the floor. That slime will NOT wipe up.
The wine takes forever to clear enough to bottle too. I really didn't like it that much.
