333_OKHRabbit Brush Bunny or Cottontail
What do you have. Seems there are a few here to be had and wondered before taking any in the next season what is the best way to cook the little guys and gals?

calgarychef1I shot one while we were deer hunting this fall. A nice clean head shot with the 7mm....seems I don't hanve any penetration problems

I Cleaned it and dis-jointed it, cut the back in half etc. Put it all in some foil with salt,pepper and a generous amount of butter.
I Gave it about 4 or 5 layers of foil to make sure it didn't leak and put it in the wood burning barrel heater. The fire was at the back of the heater and the bunny was at the front. I made sure that I kept track of the orientation on the first layer of foil. This layer was always up so it wouldn't leak. It was also sitting in a cast iron frying pan to distribute the heat a little better.
We went to bed and 7 hours later when we woke up breakfast was ready.

akperrydogMy favorite ways too cook a cottontail are pretty simple.
The First is to cut up as the chef has described, coat in flour with salt and pepper added. I then pan fry them, med to med/high heat, with a little oil until the outside is browned. Heat should be high enough so the browning takes about 5 min. Turn heat down,low to low/med add a tablespoon or less of water, cover and cook about 15 min. With a cottontail, that seems to work great!
The other way I like is to cut into quarters, wipe with melted butter and coat with crushed ritz crackers. Place in baking dish, cover with foil. Heat oven to about 300, insert dish. After an hour, turn heat to 350 and remove foil. Cook 30 minutes and you should be down. This is also a great way to cook pheasants, chukar, quail, ruffed grouse, blue grouse....the top shelf game birds. Doesn't work as good as other methods for ducks, ptarmigan, spruce hens. Works good on squirels too.

meteCut up Bugsy and marinate in a good dark beer ,soy sauce, apple cider vinegar, onion.Roast and serve with your favorite veggies etc.
