Bill/OregonAtomic Buffalo Turds
Tried these last night and they were a big hit.
Basically, you mix cream cheese a bit of brown sugar and some diced sweet onion into a paste.
Cut a dozen jalapenos open the long way, remove veins and seeds and slather with the cream cheese mix. Then add a cheddar-flavored Little Smokey sausage and wrap it up in a slice of bacon, secured with toothpicks.
I put these in my Traeger pellet grill and smoke them for two hours.
Open the lid and get outta the way, 'cause they draw crowds!

tasunkawitkohey, bill - i love making ABTs and ahve tried them many ways. i did a cheddar/crab one one that was really nice, and my basic "go-to" method is to mix the cream cheese with minced onion, a couple of shakes of lawry's seasoned salt and a few splashes of l&p worcestershire sauce. always good! i'll have to try yours. we've got quite a few variations at FOTW, if you want to look around for them, including portuguese and italian among others.
my wife used to not be able to eat them due to the "heat," which in my opinion isn't bad at all. i found the solution for this by scraping the inside membrane wout with a spoon and rinsing under cold water while scraping a little more with my thumbnail. between this and the long, slow cooking on my smoker the heat is gone, but the flavour remains!

Bill/OregonTasunka: Next batch I'll add Lawry's and Lea and Perrine's. This is a recipe begging to be tweaked. There was very little heat in the batch I did last night; I'd like at least a little.
Also heard that using a shrimp in place of the Little Smokey is very nice. Makes me also think of a really good churizo ...

tasunkawitkothe shrimp would give a great gulf coast twist, i think! that's the thing about ABTs - anything goes!

Will have to give them a try lads, though I can see the name causing some consternation on this side of the pond....

tasunkawitkoghub - if you need any advice on making them, let me know. they are rally good, and i think that when you try them you will find the name, if not delicate, to at least be apt!
