22WRFand for a little variety you could try replacing the regular salt with celery salt and add just a touch of garlic powder at the same time. I like mine with fried sweet onions as well.

billinthewildExcellent. I never thought of celery salt. At times, I will saute some onions and a clove or four of garlic in a liitle olive oil before putting the steaks in.

Parker12SSS aka BigJohnI just got off the phone with my bud in Iowa. He just put two 1" venison steak on a backyard hickory and oak fire. He cooks on an old sewer grate arounbd a rock and fire brick circle. It is good meat, you bet.

stepchild 2To add to the above i'd just say that I pan fry mine with onion and a little garlic and give the antelope to to the dog.

billinthewildA new variation, still using a skillet (cast iron works great) and olive oil.
Using a mortar and pestle (or small grinder) grind up a mix of rosemary, garlic powder (or a few garlic cloves), a dash of crushed red pepper, salt and black pepper. Rub onto steaks and sautee till medium rare.
