uplndjakeseasoning for game
there's a company called penzeys (penzeys.com) that makes spice blends. I tried their breakfast sausage blend on some old ground wild turkey(mixed w/ a bit of fatty pork) this morning. it's got a little kick but tastes pretty good. i think i'll add a little brown sugar next time. they make all types of blends, (bratwurst, venison etc) and it's easier to buy a small amount from them rather then keep all the separate ingredients in my pantry doing nothing but going stale. i buy a little bit at a time and it stays fresh and always tastes good. i used the russian style seasoning on some chukar and quail last week..cooked them up w/ some smoked sausage, carrot, onion, marsala wine and a little chicken stock in a big iron pan in the oven @350 for about an hr, then thickened the gravy w/ cornstarch....very tasty!
