Curried Wild Deer
This is what we ate on the opening of this year's deer season.

CURRIED WILD DEER
3 Table spoons oil
2 large yellow onions finely chopper
6 cloves garlic chopped
1 Table spoon chopped ginger
4 Table spoons Curry powder
1 tsp tumeric
1 tsp cinnamon
1 tsp cumin
cayenne pepper to taste
2 tsp salt
1 Table spoon Vinegar
3 pounds of deer meat cut into 2"X2"X �" pieces
3 fresh red chilies (hot) with seeds removed and finely chopped
3 large PEELED fresh tomatoes chopped

In a large sauce pan, Saute onions and garlic over low heat until the onions begin to brown, add ginger, Curry powder, tumeric cinnamon and cumin and continue to saut� over low heat ~2 minutes. Add vinegar and salt stir well. Add meat and fry until well coated with curry spice mixture. Add cayenne to your taste (optional). Add chopped tomatoes, and chopped red chilies. Mix well, cover and simmer for 2 hours over low heat. If the curry has too much liquid at serving time. Cook the curry at high heat w/o the lid until it thickens.

Serve on a bed of rice
