Grouse Recipes?
The locals here in Wyoming say no Recipe is a good Recipe for Sage Grouse! I am sure that someone here on AR has a good one. If a Coonass can make a Coot taste good then surely a Sage Chikin isn't beyond hope.

If you could get the sage out of the grouse it would be easy !

Well considering that a lot of game recipes have juniper berries added and that gin is often used in recipes I don't see why a lil' sage flavour would be all that bad. What about the sage in Grannies turkey stuffing? Everything can be made good to eat if yougive it a bit of thought. I haven't eaten sage grouse but we have spruce grouse an people say it's too strong, I've eaten it and enjoyed every bite.

So no recipe but an opinion that's based on 20 years of cooking for profit.

i'd give a try with a couple things. first would be to stuff the bird using a fruit bases stuffing. the fruit should take the gameyness out. then the good old crockpot might work well, especially if you use some orange juice to break down some of the tissue and absorb tastes. And if that doesn't work, i'd slice the meat into strips, sautee it with onions, mushrooms etc. and mix it into a wild rice casserole. that recipe works well with things like tough old goose

I like the orange juice idea. use fresh oranges and make orange flavored cupcakes in the hollowed out peels. will do that one and report back!
