3-pepper sausage
This is for 5 lbs of meat:

GRAMS
28 Salt
7 Cure
4 white pepper
4 red pepper
4 black pepper
2 onion powder
3 garlic
1 cumin

after I mix this with the meat I let it sit over night. Then I just roll into 1 lb logs then either roll in red pepper or black pepper for an outer coating, then smoke. I've used beef and deer. I thought deer was better. Last Christmas I made 70 lbs of it and vacuum packed it and mailed it off to relatives as gifts. Now there is a high demand! Good luck

You lost them with the grams... Actually, Carpetman uses almost that same recipe with his cat sausage. Only difference is he adds a pinch of Viagara.
