BIG SAM?Slug gun work?
I am finally getting around to building that Remington 11-87 dedicated slug gun.
Other than me replacing the barrel to a rifled Hastings barrel, are there any gunsmiths out there that specialize on slug gun work that helps to get the most accuracy out of one?

It's a gun, and so you would approach it as you would any gun. Make sure that the crown is clean and square, make sure you have good ajustable sights. Have the trigger pull cleaned up, hand assemble your own ammo from the the best components available and then practice.
I have a friend who casts his own slugs and gets incredible 100 yard accuracy out of his 870.

MarkSam- Check out tarhunt.com, they have some good advice and also work on 870's, so they may be able to help on your 11-87.
A few years ago I was making this same decision you are right now, and I decided to buy a mossberg 695 instead. I feel it is a much better platform and also costs slightly less than a Hastings barrell, at least back when I was looking at them as I don't know what they sell for now.
