I take it you've handled one? Are the stainless versions available yet? ~~~Suluuq
Allow me to temper my opinions with the caveat that I am a long way from a Mauser expert and have been learning from the development of my new rifle/cartridge and the forums. I did, however, closely examine each of these at the recent NRA Convention.

My gunsmith, Dave Gentry, had one of the new ones in his shop the other day when I was there. Still, for the money, they're a lot of rifle! The "rough" aspects can certainly be cleaned up. For the money, they're a lot of gun. I don't believe the stainless versions are available yet. Apparently the rifles are being modified by the importer to allow the bolt to be opened with the safety in the "on" position.
If I was building a "custom" rifle, wanted CRF and stainless, I'd go the Win 70 route first and Ruger M77 MKII second... they already have a three-position safety (the Mark X does not) that locks the bolt in "safe" as well as allowing the bolt to be opened while on safe when in the middle position. Used, these can be had quite reasonably. To "upgrade" the MarkX to a three position would be expensive... around $300.
