What does a gun smith do when they talk about blue printing and trueing a rifle? Any info would be great. Do they unscrew the barrel and shim it some way to make it perfectly straight?

Only the ones you need to RUN away from.

Surfaces are machined/ground to be straight, parallel, square and concentric to the C/L of the action.
If the receiver threads need to be re-cut, the origional barrel will most likely need to be replaced as the thread will no longer fit properly (excessive slop), nor will any barrel that has a "standard" shank thread.

ALL barrels are not all staight. Some are straighter than others but all have some degree of non-concentric bore/exterior ratio.
