You're right: it's a great problem to have. On the Ultra Mag chambering- while Mark Penrod was iffy on the .300UM, Dennis Olson and Fred Zeglin both indicated they'd done UM cartridges and hadn't had trouble making them feed with the M70 factory UM magazine. I've also queried John Ricks to get his take on the project.

I'd suggest keeping the most accurate of the two .375s as a .375, and re-chambering the other to either .300 Weatherby or 7mmSTW for North American and African plains game.
With judicious handloading and careful bullet selection, you are covered for everything.

If you expect to do a lot of African DG hunting (Cape buffalo, hippo, elephant), rechamber the second rifle to .458 Lott, and run it at 2100-2200fps. Recoil shouldn't be too bad at all.

Yes it is,most of my rifle's have the Leupold QRW bases on them so I removed the rear sight and use a peepsight with a Weaver type base and for the front removed the sight and installed a Lyman dioptor (inserts) in the ramp.

It works well enough but I could never understand people complaning about the BRNO and CZ stocks if you remove the scope on one of these the irons line up perfectly.
I mean the rifle is called the Safari Express and you can't see the sight's ?
