Cowboy_DanMosin-Nagant modifications
I have an M91-30 which I want to make into a great huntng rifle. I plan on mounting a scope and fully bedding the stock. Is there anything I am missing which will make this rifle even more intrinsically accurate?

Don't own a M91-30 myself, but peruse various gunsites and occasionally read about the rifle.
Seems a quick/simple trigger job consists of putting a washer/shim between the trigger flat spring and the receiver. Too thick of a washer causes a problem.....seem to recall firing pin will not cock if washer too thick. Suppose to lighten the Mosin's trigger pull.
Google Mosin trigger job, perhaps you find it.

Cowboy_DanTrigger job would probably be a good idea, Mosin triggers are a bit gravelly. At 60 yards (length of the nearby range) I get about 3" groups just loading and firing a full magazine with the iron sights. Not too bad, but according to the markings, this rifle underwent testing as a potential sniper, so I bet I could do better with it.

Kind of trying to make a silk purse out of a sows ear.

TCLouisBed it, work over trigger and shoot it some.
Try it and see how precisely it shoots, some Milsurps will/do NOT shot worth a durn and so you will have saved some money.
If it is a fairly aprecise shooter then consider scout or D&T for scope. Both are fairly reasonable, forge or welding the bolt will be a bit more expensive.
May turn out to be a silk purse, maybe you spend money to create a sows ear.
Not all Milsurp rifles shoot great, some do really well.
Be prepared to do some loading to find that load it likes. I have hit great loads with the first load tried some great shooting loads were never found by me.
