A fair priced Beretta Silver Sable double rifle has come up in Australia.As luck would have it it is a single trigger model and I much prefer the double triger, is it as simple as a trigger unit swap to change or is it more complex.
I also own a twin trigger (very modern-3 yrs old) silver pigeon 12g,
any chance the barrels would fit?Is the steel the same?

Can't help you on the trigger question, suggest you call Beretta,
they will give you a straight answer. Ask for Tony.
Re barrels, Unlikely they will fit, even with fitting by a gunsmith.
The other problem is if you fit them to the DR, you
may well make them loose on the Shotgun.
BTW, They are good DR's

The Silver Sable DR's use a 20g frame, so your 12 gauge barrels are never going to fit.
Silver Sable DR's are offered with either single or 2 triggers, so it might be possible to convert it.
Beretta Aus should know.
