The venison is the shoulder meat of the young calf I took a few weeks ago. Very tender for the shoulder.

gryphon1get a mincer/snag filler and get into that side of things too. It really value adds to your kill...then Salamis after that.
Already do snags. I would like to try salami but I'm scared I'll poison everyone
