So it seems the Gippsland lakes are full of eels. What are some ways to prepare these buggers? I've tried smoking one and found it very strong flavored.

Are you de-sliming them before you smoke?

BakesThese are freshwater eels mate. Although the Gippsland lakes are salty to brackish. I had one swim between my feet the other day. Very popular here for shark baits.

gryphon1smoked eels are a real treat. Brine then for several hours and then use natural hot wood smoke. After an hour of hot smoking put a knife slit in the tail to drain a heap of fat/oil out before they are finished.
Google it but for Aussie eel recipes.
