I would strongly recommend Kettner / Zehner which is the kind of old-style gun maker with a lot history and a very good selection of German guns - especially Blaser, Sauer, Mauser and Krieghoff. He now also has a good selection of hunting clothes (for example I bought my last jacket there). Another advantage - he is just a five minute drive by taxi away from the Airport.
Just rereading your post - if you fly in with Ryan Air then your will be flying to (Frankfurt) HAHN which is not Frankfurt Airport, but a former US airforce airport over 1 hour away from Frankfurt - I think there are buses to Frankfurt, but not sure about it. Probably the easiest is to rent a car for the entire week and then drive around from there.
Other recommendations - Heidelberg is pretty close and you should be able to get the presents like nutcrackers and cuckoo clocks there in some shops...
