I'm sure the UK guys can help you out more than I, but I do have a couple of friends that are gamekeepers around Inverness and another in Northumbria (about 5 miles from Scotland!). If interested, I can get you in touch with them. I haven't a clue what they can offer you, but they would know where to go for the best of either in their respective areas.
