I also have very fair skin, and burn real easy! Here in Oz, we have Akubra hats, which are made of rabbit fur - warm in winter, cool in summer, and comfortable. They're sort of 'standard issue' out here. They come in a wide range of styles - I don't have a link, but a search on Google should turn something up.
My ex's family has a sheep station out west ('outback' to you guys), where the temperature can reach 50 C

in summer, and we've worked hard in those conditions.
On that place, no-one was allowed to leave the house without their hat - caps were banned.
