I have a problem as probably a good percentage of you. I mean gunmakers have a strong tendency to forget that we left-handed people walk the earth like the rest of humanity and that some of us are hunters who would like to go for elephant or buffalo. So my question is : what is the biggest bolt-action rifle available for me in the market? I know the Remington 700 Safari exists in left-hand, and some people told me the Mark V as well (but it seems - according to weatherby.com - that the only available in LH are Accumark and Ultra-light Weight)...

There are used Weatherby Mark V rifles in .378, .416, and .460 around, but I don't see them very often.
Sako used to offer their Finnbear in .375, but they don't offer the M-75 in lefthand.
Dakota will make anything you want, at prices exceeding $3000US.
Savage may (or may not offer their .375H&H and/or .458WinMag. in lefthand someday).
Blaser offers a lefthand bolt for their R93 which is available in .375H&H and .416Rem.
I've only mention the manufacturers I have positive experience with. There may be others producing lefthand big-bores, in addition to the small custom shops.

Heym catalogs the express bolt action rifle as being available in left hand, but the wait on that could be measured in years.
