If I was you I would check out Anglers Artistry web site, NH. He does excellent work on any and all types of fish , his painting skills are second to none. He did the pod of Orca's and King Salmon in Cabela's in Washington state..

You will likely get a slew of answers on this one, but in reality, the amoount of taxidermists who really know how to fish taxidermy that looks realistic is pretty small. Ricardo C hit the nail on the head when he recommended Angler's Artistry. Richard Krane has an unsurpassed knowledge of fish anatomy and kinesiology, as well as an intricate understanding of how to replicate the subtle interplay of coloration present on fish, both fresh and salt water. If you want your fish done correctly, I would give him a call.

Rich,
The process with saltwater fish is usually a replica of the appropriate size. This is due to the high fat and oil content present in saltwater fish. Some folks will skin mount a salt water fish, using a carved body, with castings made of the head, fins, and tail. It all depends on the species. Give Rick a call, and he'll tell you what you need to know. Good luck.

I have had excellent results with Advanced Taxidermy out of Canada. They did a monster Arctic char for me that is scary lifelike. Their website shows lots of salt water fish. Take a look. www.advancedtaxidermy.com

I used Advanced Taxidermy for my big coho salmon and rainbow from Alaska. Great work! They do all of the fish for Cabelas.
