Meat from Game Animals
What do the taxidermists do with the meat from game animals like javelinas when taken in for a full body mount?

Most all of our clients process thier javelina meat. It makes great summer sausage and crock pot meat. Almost all of our clients bring skin only with head attached to their game animals. If a whole carcass came in, we would never eat the meat as we have no way of knowing how it was handled or how long it was on the carcass. Certainly not worth the risk. We would skin it off the carcass and let the client dispose or do what they want with it.

If you have not tried javelina, you really should, it is very good tasting. Smiler

As a taxidermist, I don't deal with meat. I deal with skins and before I get them, I expect the client to have had the animal skinned by their butcher or guide/outfitter. Residual meat and the skull all go into a barrel to be transported to a rendering plant.
