I'll be on a boat based brown bear hunt in early May and wondering what the weather is like now in SE Alaska and what's the forecast for the Spring....early I hope!

Expect it to be horrible and you'll be happy. May may have less rain than some other months but it will likely be drizzly to pouring rain.

Not just a coat. Bring rubber boots, rain bibs, hip waders and a hat. If you do that at some point you will find some combination of gear and weather that is serviceable.
Find heavy duty rain gear like Helly Hansen, don't rely on cheap or thin raingear or goretex, if you do you'll be sorry if the conditions are right.
