Well, I am not in the habit of using "quickdraw" tactics on game. I try to hunt them the way George Nonte etc did, which is from as stable a hold as is possible. Once I am where I will be hunting, my primary hunting arm is in my hands, not in my holster. If I could not get both hands on my DE or Glock 20 for a steady shot, I certainly would not try to take one with a one-handed quickdraw. Your "quickdraw" method of drawing, aiming, and firing at game all with one hand is not something I have seen other handgun hunters employ. How many deer have you sucessfully taken in this manner?

I use as solid a rest as I can muster [never less than two hands while standing though], and I do not cock the hammer until I am ready to take the shot.

Though I do not think this one handed use is important at all on a hunting non-combat handgun, I have no problems doing so on my Mark XIX, and my Mark I is even easier as the slide is not nearly as tall as the Mark XIX slide. THis does not make me a better man at all. Simply a man with hands that fit the DE I guess
