My favorite is Mew Shoo Cat, but only in the better restaurants. Their ingredients from the market are fresher.

I think that Asian restaurants should simply list the meat ingredient as protein, or unknown, or whatever was slow, or whatever got run over. Honesty in eating. Cook in enough hot sauce and it all tastes the same. Yum yum.
