Jim,

I've always cooked black bear well done because of trichinosis but I never really knew anything about it and how works. Pretty interesting.

Do I remember that the Alaska type trichinosis is NOT killed by freezing ?? Other types are killed.

Freezing meat does NOT kill the Trichnella species found in Alaska's wildlife.

Nothing to do with Alaska and everything to do with black bear regardless of geographical location but you are correct that freezing will not kill it like it will in pork. Only heat will.

Pigs/Pork have it also, few of us have given it up due to the danger getting Trichinosis....it's all in the temperature you cook it at, at 144 degrees F it kills it instantly, at 130 degrees F it takes 30 minutes to kill the Trichinae. Bon Appetit

According to another test done by AK F&G a greater percentage lynx meat has trichinosis than bear meat.
both are well worth the extra cooking time.


Anyone who claims the 30-06 is ineffective has either not tried one, or is unwittingly commenting on their own marksmanship
