My favorite small game knife is my Randall Trout and Bird.
I shoot a LOT of small game for the pot, rabbits, squirrel, grouse, dove,quail, etc.
The back edge is sharpened, and I use it to disjoint bones, saving the main edge for finer work.

Sorry; already gone. A collector in Woodlands TX has taken possession.
The blade on this one is 3 1/4 inches. Short enough to use on small stuff. Long enough to work pretty dang big.
I've got a neat feather in the works right now.

Yes; I weld up my own steel. It's generally called a feather pattern; but lots of times a "@$$%&**#$%" pattern because the failure rate is pretty high.
You are actually making tremendous shear loads on all of your previous welds on the billet. Lots of variations out there in this pattern.
Cuts well; the layers of 1084 and 15n20 are both very good blade steels individually. This one was about 800 layers at the final weld.
