Aspen Hill AdventuresMaitake
It's that time of the year to collect Hen of the Woods/AKA Maitake (Grifola frondosa). This is an excellent mushroom for just about everything, sautee, soups, pickles, etc. They dehydrate perfectly for storage.
This past weekend I got together with some friends and we went hunting. This is about 50 pounds of mushrooms. We cleaned a bunch for multiple uses and also made some savory pickled Hen with anchovies. Absolutely delicious.
